Chicken Parmesan Sandwiches



Subway used to have a Chicken Parmesan Sub that both Anthony and I really liked.  It's just like a company to get you hooked on something and then take it off their menu.  Oh well.  All good things must come to an end. 

Making a chicken parmesan sandwich isn't exactly rocket science, so I decided to make my own once Subway no longer had them.  If you are interested, here's how I make them.

You will need:
Cooking spray
Garlic Powder
Dried Oregano
Buns
Frozen Chicken Patties
Spaghetti Sauce
Mozzarella Cheese

To make them:
-  Turn your oven on broil.

-   Cook chicken patties in the microwave until they are heated through.  You could use grilled chicken breast to make these healthier...but the chicken patties actually taste better in this sandwich and are much easier to prepare.  This meal is, after all, all about convenience.

-  In the meantime, open the buns up and lay them out onto a baking sheet.  Spray the top half of the bun with cooking spray, then sprinkle with garlic powder and oregano. 

-  When the patties are done cooking, lay them on the bottom half of the bun.  Then top with spaghetti sauce and mozzarella cheese. 

-  Place in the oven under the broiler for a few minutes until the top bun is golden brown and the cheese is melted.  Be sure to keep an eye on them.  They go from not brown at all to burnt in a hurry and burnt is not a good flavor!

That's pretty much it.  Yes, I realize that these don't actually have any Parmesan cheese on them.  You could put it on if you wanted to, but I don't think it's worth the extra calories.  We normally serve this with canned vegetables, fruit, and fries for a quick and easy meal.   Today we had unsweetened applesauce topped with cinnamon and canned green beans.  I always add dried minced onions to my canned green beans before I cook them.  That's how my grandma always made them and I always like them that way.

This seems to be a real kid pleaser.  My son doesn't eat sandwiches well, so I make just the chicken part with the sauce and cheese and then cut his into pieces for him.  He gobbles it up in no time!
